Romantic Italian Dinner

Appetizers: Stuffed Mushrooms Eggplant Bruschetta
Salad: Field Green Arugula Salad with Pears and Candied Walnuts
Main Course: Canelloni-Tender outer wrap stuffed with spinach, macadamia cheese and vegetable sausage topped with a red pepper remoulade and cream sauce Marinated Broccoli and Zucchini

Spring Rolls with Sweet and Sour Dipping Sauce: Fresh bean sprouts, avocado, basil, mint, carrots and sunflower sprouts wrapped in a dehydrated vegetable wrap served with a tangy and flavorful dipping sauce
Pad Thai Noodles: Tender zucchini noodles, snow peas and enoki mushrooms tossed in a tangy almond "peanut" sauce topped with paper thin cabbage, cilantro, lime wedges and crunchy dehydrated almonds bits
Asian Wild Rice with Winter Vegetables: Bloomed Manatok Wild Rice and tender vegetables marinating in a spicy ginger-orange sauce
Ginger-Miso Noodle Salad: This light salad is composed of English cucumber, carrot and broccoli "noodles" dressed with a sweet ginger-miso sauce atop a bed of seasonal greens
Key Lime Cream Pie: Tree ripened limes flavor this almond cream pie. Elaina uses Irish Moss (a flavorless, fat free seaweed) to make the pie firm yet light. Topped with a light macadamia cream.

Salad: Organic farmers Salad Mix, Heirloom Tomato variety & thinly sliced English Cucumbers drizzled with Tangy Pineapple-Mustard Vinaigrette
Main Course: Curried Marinated Vegetables over Parsnip Saffron Rice Wilted Spinach with a delicately seasoned Cashew Cream Sauce Zu-roomasala -Tender marinated mushroomy summer squash with a tangy masala-tomato marinade Non-Bread- Just like the traditional Naan Bread, substituting sunflower seeds and vegetables for flour to make a savory, soft wrap in a dehydrator
Dessert Selection:
1. Mango-Coconut Ice cream - Made using Young coconuts, Mangoes, almond milk and fresh vanilla beans. Sweetened with agave nectar 
2. Lime Dream Pie - Coconut-Macadamia nut crust filled with a creamy-dreamy- coconut-lime filling. Tangy, fresh and light! 
3. Peach Cobbler - A Walnut-Date Crust filled with tangy summer peaches and peach glaze topped with a Cinnamon-Pecan Crumble that tastes like buttered pecans.
