Nori is the Japanese word for dried seaweed. Nori seaweed is mainly cultivated on nets in the sea on which the seaweed takes root and grows. The nori is harvested by picking it from the nets and washing it thoroughly. It is then chopped finely and spread onto flat meshes in order to dry it.
Nori is best known as that black, flat thing that wraps the fish to rice on sushi. It looks like nothing more than black-colored paper, and one sheet of Nori weighs a mere 2 grams, but it has many invisible powers you have never imagined.
Vitamin A
Nori contains many kinds of vitamins. The amount of vitamin A in 2 sheets of nori equals 45 grams of spinach. Vitamin A is good for the skin, teeth and hair.
Vitamin B1 and B2
The amount of vitamins B1 and B2 in 2 sheets of nori is the same as found in 50 grams of pork. Since vitamin B1 helps to change rice to energy, it was smart of Japanese people to wrap nori around sushi rice.
Vitamin C
The amount of vitamin C in nori is twice as much as is contained in the same amount of lemon. Usually vitamin C is vulnerable to heat, its components broken down in the cooking process. But unlike other Vitamin C's, the one found in seaweed is resistant to heat, and therefore available for fortifiying the body.
Fiber
One third of nori consists of fiber. 2 sheets of nori contain a full 1.8 grams of fiber. Fibers are effective at repelling carcinogenic substances and keeps the gastrointestinal system clean.
Calcium
Nori is rich in minerals such as calcium and iodine. Calcium does not only work to make your bones stronger, but is also said to help calm anxiety.
Iron
2 sheets of nori contains nearly the same amount of iron as contained in one egg. Iron helps to prevent anemia.
EPA plus ß-carotene
Nori is known to contain plenty of ß-carotene, which is know to retard the growth of cancer cells, and EPA and taurine, which are effective in reducing cholesterol. Experiments show that people who ate nori for a week had decreased levels of LDL ("bad cholesterol") and increased levels of HDL ("good cholesterol").
Nori’s flavor stems from the amino acids which are also contained in kombu (a kind of kelp) and katsuo bushi (bonito fish), which the Japanese use as the flavor basis of Japanese food. That is why nori matches with rice very well.

Avocado Nori Rolls

Nori rolls make a great take along meal. Avocado is a whole raw fat which helps to keep the skin and hair soft and rid the body of old toxic fats. Nori is a sea vegetable which is the highest in protein content (48%) and is very easily digested. Nori is extremely high in minerals.
2 sheets of raw or toasted sushi nori 1 large Romaine leaf cut in half down the length of the spine 1 avocado, peeled and sliced ½ red, yellow or orange bell pepper, julienned ½ cucumber, peeled, seeded and julienned ½ cup raw sauerkraut ½ carrot, beet or zucchini, shredded 1 cup alfalfa or favorite green sprouts (sunflower, buckwheat, etc.)
1-2 Tbs. spicy miso paste (see recipe below) 1 small bowl of water for sealing roll
- Place a sheet of nori on a sushi rolling mat or washcloth, lining it up at the end closest to you.
- Place the Romaine leaf on the edge of the nori with the spine closest to you.
- Spread Spicy Miso Paste on the Romaine
- Line the leaf with all ingredients in descending order, placing sprouts on last.
- Roll the Nori sheet away from you tucking the ingredients in with your fingers as you go.
- Seal the roll with water or Spicy Miso Paste. Slice the roll into 6 rounds.
Spicy Miso Paste
4 Tbs. Unpasturized Light Mellow Miso 1 Tbs. sesame oil ¼ tsp. cayenne or to taste
- Stir together with a fork.
