Grain-Free Pumpkin Spice Granola

Sep 23, 2022

I've always loved the crunch of good homemade granola. I check the store aisles endlessly, hoping there will be healthy granola that's not 30+ grams of sugar per serving and isn't filled with unnecessary filler ingredients. I've yet to find the perfect one, so I always make sure I have some of my own on hand.

We added goji berries in this recipe instead of traditionally used raisins to give this granola an antioxidant and superfood kick. Plus, mesquite and maca powders are also rich in antioxidants and give this granola a graham cracker flavor without a bunch of added sweeteners or fillers.

Granola Notes:

  • For a lower-sugar option - omit coconut sugar and sub with 1/4 tsp. pure monk fruit powder or stevia
  • Add raisins in place of goji berries
  • Switch out the sunflower seeds for pumpkin seeds or any other nut or seed like walnuts or almonds
  • Add 1/4 cup protein powder for added protein!
