Ingredients

- Peel, slice, and cube sweet potatoes.
- Drizzle oil over sweet potatoes and sprinkle with salt and garam masala.
- Place on a parchment-lined baking sheet.
- Bake at 425ºF for 15 minutes and toss.
- Add maple pecan mixture and toss.
- Bake for an additional 10-16 minutes or until tender.
- Toss onions with sweet potatoes and serve.
- Add all topping ingredients in a small mixing bowl. Mix well until combined.
- Meanwhile, caramelize onions by slicing onions in half and then thinly slicing into half rings.
- Saute for 10-15 minutes in a saucepan with desired oil of choice and coconut aminos, stirring often until golden brown.
