This grain-free rice dish alternative is the perfect pairing for your taco night! Cooked with other flavorful ingredients like cumin, roasted garlic, and cilantro, this low-carb and keto-friendly side dish will become a staple in your kitchen. It’s packed with all the flavors of traditional Mexican rice but with loads more nutrients and less starchy carbs.

To make this dish keto-friendly:

  • omit black beans
  • add half the amount of salsa

Other Additions:

  • Top with hemp seeds for added protein
  • Add more roasted veggies like zucchini, broccoli, and cabbage to make this a more hearty side dish
